Terrain characteristics

Medium-hilly soil, mainly clayey and marly with natural endowment of minerals and microelements. South-Southeast exposure.

Harvest

Yield of 20% of the total production, whose grapes come exclusively from old vines and hillside crus. A product with the right degree of alcohol and acidity is obtained, preserving as much as possible its floral and fruity aromas. Harvested by hand and in boxes, the grapes are sorted on the vine and in the cellar;

Mesovinification

The individual plots are vinified separately;

Vinification

Soft pressing of whole grapes with pneumatic presses; Natural cold sedimentation. The first alcoholic fermentation, with indigenous yeasts, takes place in stainless steel tanks with constant temperature control at 18°; Maturation in steel until bottling (tirage) in the spring following the year of harvest; Longer stay on fine lees at harvest with frequent pumping over;

Maturation

Re-fermentation and sparkling in the bottle with selected yeasts and subsequent ageing on the same for 4½ years in underground cellars at a constant temperature between 12° and 15°; More yeast was added at the draught stage, reaching a percentage of 5%;

Optimal drinking period

If perfectly preserved, the product can be tasted after years from dégorgement being capable of increasing complexity and long and positive evolution over time.

Tasting notes and pairings

Unique in its kind, the colour is a soft yellow with green hues; The nose is strained towards fresh scents in which aromatic vegetal notes and tonic citrus fruits of great intensity stand out; Fresh spicy aromas and hints of dried fruit emerge on the finish; In the mouth it is vertical, the acid backbone is robust and tonic, guaranteeing excellent persistence; The structure is remarkable and suitable for great longevity;
