Total controlled grassing. Fertilization: occasionally organic, supplemented by the constant contribution of micro and macro elements of which the soil is naturally equipped in addition to those originating from the biological transformation of the residue of cuttings.
Hilly land, arranged on three terraces. Full exposure to the South. Soil consisting of marl and sedimentary clays rich in fossils and microelements.
Autumn harvest to enhance the formation of sugars and the variety of aromas. Manual and box harvest, with sorting of the grapes on the vine.
Destemming and soaking in steel tanks, fermentation and maceration with the skins for very long periods. With repeated daily fulling.
In barrique for 12 months. Bottling and minimum aging in bottle of 18 months
Bottle 0,75 l – Magnum 1,5 l
The fragrance is fine, spicy and ethereal. Alternates with notes of cherry under-ripe fruit. The taste is enveloping, intense, structured and complex. Perfect accompaniment with game, roasts and braised meats. Excellent with cheeses and cured meats.
From the sale is guaranteed a long and positive evolution. A wine of great longevity.
