Medium-hilly soil, mainly clayey and marly with natural endowment of minerals and microelements. South-Southeast exposure.
A rather early harvest allows to obtain a product of the right gradation and acidity, preserving the floral and fruity scents. Collected strictly by hand in cassettes, with sorting of grapes on the vine and in the cellar.

Soft pressing of whole grapes with pneumatic presses. Natural cold sedimentation. The first alcoholic fermentation, carried out by autochthonous yeasts, takes place in stainless steel tanks with constant temperature control at 18 ºC. 1/3 of the base carries out the first fermentation in barrique until bottled (tirage) in spring after the year of harvest. Refermentation and fermentation in bottle with selected yeasts and subsequent aging of the same for a minimum of 48 months in underground cellars, at a constant temperature between 12 and 15 degrees. More yeasts have been added during the draught, reaching a percentage of 5%.

If perfectly preserved, the product can be tasted after years from dégorgement being capable of increasing complexity and long and positive evolution over time.
The bright straw-yellow color. Fine and persistent perlage. Elegant and complex on the nose, the bouquet is broad and with great personality. In the mouthconquers for freshness, savoriness and structure. Villa Franciacorta Extra Brut is ideal as an aperitif, lean thanks to its great dynamism it is also a mouth-watering match with first and second courses, especially fish dishes.
