Soft pressing of whole grapes with pneumatic presses. Natural cold sedimentation. The first alcoholic fermentation, carried out by autochthonous yeasts, takes place in stainless steel tanks with constant temperature control at 18 ºC. Aging in steel until bottled (tirage) in spring after the year of harvest. Longer stay on the lees in harvest with frequent pumping over
12° e 15°. More yeasts have been added during the draught, reaching a percentage of 5%.

Bottle 0.75 l - Magnum 1.5 l - Jeroboam 3 l - Mathusalem 6 l (with direct refermentation).
If perfectly preserved, the product can be tasted years after dégorgement, being capable of increasing complexity and long and positive evolution over time;
Straw-yellow colour. The nose releases eloquent floral, fresh fruit and bread crust notes. It caresses the palate with fine, persistent bubbles, enhancing the elegant structure, ending with an integral, lingering aftertaste. Ideal from aperitif to entire meal.
