Terrain characteristics

Medium-hilly soil, mainly clayey and marly with natural endowment of minerals and microelements. South-Southeast exposure.

Harvest

A rather early harvest allows to obtain a product of the right gradation and acidity, preserving the floral and fruity scents. Collected strictly by hand in cassettes, with sorting of grapes on the vine and in the cellar.

Mesovinification

Every single parcel of the 26 properties is vinified separately

Vinification

Soft pressing of whole grapes with pneumatic presses. Natural cold sedimentation. The first alcoholic fermentation, carried out by autochthonous yeasts, takes place in stainless steel tanks with constant temperature control at 18 ºC. 1/3 of the base carries out the first fermentation in barrique until bottled (tirage) in spring after the year of harvest. Maturation

Refermentation and fermentation in bottle with selected yeasts and subsequent aging of the same for a minimum of 48 months in underground cellars, at a constant temperature between 12 and 15 degrees. More yeasts have been added during the draught, reaching a percentage of 5%.

Optimal drinking period

If perfectly preserved, the product can be tasted after years from dégorgement being capable of increasing complexity and long and positive evolution over time.

Tasting notes and pairings

In its essence it represents the maximum expression of the unique terroir from which it comes: great structure, fragrance, aromatic complexity and backbone. An unmissable experience for those looking for wines with a strong personality, hazelnuts and white flowers, are combined with a slight note of vanilla and croissants for a result of intoxicating pleasure. Perfect as an aperitif, unsurpassed with oysters.
