Vineyard management

Total controlled grassing. Fertilization: occasionally organic, supplemented by the constant contribution of micro and macro elements of which the soil is naturally equipped in addition to those originating from the biological transformation of the residue of cuttings.

Terrain characteristics

Hilly land, arranged on three terraces. Full exposure to the South. Soil consisting of marl and sedimentary clays rich in fossils and microelements.

Harvest

Autumn harvest to enhance the formation of sugars and the variety of aromas. Manual and box harvest, with sorting of the grapes on the vine.

Mesovinification

Destemming and soaking in steel tanks, fermentation and maceration with the skins for very long periods. With repeated daily fulling.

Vinification

In barrique for 12 months. Bottling and minimum aging in bottle of 18 months

Tasting notes and pairings

The nose shows pleasant notes of small red fruits and spices. On the palate good structure, pleasant smoothness and persistence. Excellent with cured meats, meat-based main courses and medium-aged cheeses.
