Medium-hilly soil, mainly clayey and marly with natural endowment of minerals and microelements. South-Southeast exposure.
A rather early harvest allows to obtain a product of the right gradation and acidity, preserving the floral and fruity scents. Collected strictly by hand in cassettes, with sorting of grapes on the vine and in the cellar.

Soft pressing of whole grapes with pneumatic presses. Natural cold sedimentation. The first alcoholic fermentation, carried out by native yeasts, takes place in French oak barrels, where it will remain there for 8 months with the fine lees and fermentation yeasts with battonage operations until bottling (tirage) in the spring following the year of harvest. Re-fermentation and taking of foam in the bottle with selected yeasts and subsequent aging of the same for a minimum of 96 months in underground cellars at a constant temperature between12° and 15°. More yeasts have been added during the draught, reaching a percentage of 5%.

If perfectly preserved, the product can be tasted after years from dégorgement being capable of increasing complexity and long and positive evolution over time.
Produced only in the best vintages , Villa Selezione Brut is a wine of great refinement, structure and elegance. Fruity, mineral and lysate notes are released on the nose; the taste is intense, complex and articulate. Good structure and balance, the prolonged aftertaste reflects the promised sensations.
